Chocolate Munchie Cake

As a child my mum used to make this cake and it was my brother’s favourite. It’s great if you have leftover ingredients from your Christmas fruit cake in your pantry. It’s quick and easy to make and although it’s not the most attractive looking it tastes really great. Added to this there’s no baking and you can do it well ahead of time.

We took the munchie cake round to friends for a BBQ and had it with some vanilla ice cream. They thoroughly enjoyed it and asked me to make it again so it definitely went down a storm!

Instructions
  1. Grease a 6-7 inch flan tin, and line with cling film.
  2. Break the chocolate into pieces and place in a bowl resting over a pan of hot boiling water. Add the butter and cream until it all melts. Once everything has melted take the bowl off and set aside to cool slightly.
  3. Break up the digestives into quarters and toast your almonds slightly.
  4. Add the biscuits, fruit and nuts to the chocolate mixture. Stir it in gently and poor into the prepared tin. Lightly smooth and level the mixture then chill in the fridge for at least one hour.
  5. Serve and enjoy!
