This spicy Mexican chorizo and bean soup is a real winner for a quick and easy homemade lunch! You’ll definitely think it’s better than shop bought soup once you’ve tried it.
It’s full of goodness and slightly naughty with a handful of cheese and a dollop of sour cream, (although I did use low-fat sour cream). It adds to the flavour and gives it a really creamy texture.

This is a great soup for fun little extras, you could replace the chorizo with leftover chicken if you wanted (or have both). If you wanted to have it for dinner, I would serve it with slices of sourdough 😋
