We love a Thai green curry and I wanted to make something that was easy to do but packs loads of flavour. I love one pot cooking and am really into traybakes at the moment after our Mexican Chicken and Cauliflower Rice Traybake a few weeks ago.
We love chicken thighs as they’re much juicier and have much more flavour than breast meat, though we mixed it up here and used drumsticks as well in this recipe.

This Thai green curry traybake is a great easy dish if you’re entertaining for friends, you might have to dash off a few times to add ingredients but that’s a great opportunity to get another bottle from the fridge!
We both really enjoyed it as it was packed with loads of flavour. I forgot to buy the prawn crackers but I won’t forget them next time, this dish is very saucy so great to dunk.
