Cucumber Fizz

This cocktail is so easy to make, it’s brilliant for a summers day as it’s very refreshing and has a subtle sweetness from the prosecco. I made this cocktail more fun by spiralising the cucumber. If you haven’t got a spiraliser I would very much recommend them! They’re great for stir fries, salads, courgetti and many more things – you can even buy some spiralised vegetables in the supermarket these days, although they can be pricey for what they are so you might as well do it yourself!

We have not long got back from our holiday and while we were away had many cocktails – after all we were on holiday! 😃 I wanted to make a refreshing cocktail as I’m a big fan of cocktails that contain fruit or anything you can eat after (I always pinch the fruit from Dean’s drinks!).

I love cucumber and always have it in salads as I find it very refreshing, so I thought it would go well with another one of my favourites: prosecco! The combination worked really well together along with the mint and honey. This cocktail also looks great in the glass so if you have friends round they will love it!

Cucumber Fizz

Cucumber Fizz

This subtle sweetness and refreshing coolness make this a perfect summer cocktail!
Servings 1 cocktail

Ingredients
  

  • 1 glass prosecco
  • 1 handful fresh mint extra for decoration
  • 2 inches cucumber
  • 1 tsp honey
  • 1 lime
  • ice for serving

Instructions
 

  • Spiralise your cucumber and put it in the cocktail shaker. Chop your mint and add with the cucumber.
  • Squeeze all of the lime into the cocktail shaker along with the honey.
  • Give the all the ingredients a good shake. Add some ice to your glass and pour the mixture over. Top up your glass with prosecco. You will get some fizz!
  • Serve with a sprig of mint for decoration.
