  1. Boil a large pan of boiling water add a pinch of salt. Add the orzo and boil for 12 minutes.
  2. Chop all of the ingredients except the olives – leave them whole.
  3. Once the orzo it cooked drain well and add to a bowl. Mix in the tomato puree and a little bit of the oil from the sun dried tomatoes (optional), then add all of the other ingredients and mix well. Season with oregano, salt and pepper.
  4. Serve and enjoy!
