Boil a large pan of boiling water add a pinch of salt. Add the orzo and boil for 12 minutes.
Chop all of the ingredients except the olives – leave them whole.
Once the orzo it cooked drain well and add to a bowl. Mix in the tomato puree and a little bit of the oil from the sun dried tomatoes (optional), then add all of the other ingredients and mix well. Season with oregano, salt and pepper.
