It’s been non-stop in the Globe Scoffers household the past two weeks, I have been experimenting loads with recipe ideas and have lots in the pipeline but again life has gotten in the way with blogging, but exciting times are ahead. So my apologies for the lack of recipes in recent times but life is an adventure right!?

Two weeks ago we went to London, part of the weekend was Dean’s birthday present where I took him to Alain Ducasse at The Dorchester for a 7 course tasting menu. We had a fantastic evening and once again it was great to try some amazing dishes.

The next day we met up with Dean’s uni buddy Ed and his girlfriend Whitney. It was great to catch up with them as we hadn’t seen them in almost a year. It’s always a pleasure and we had a great weekend!

They’ve just bought their first home too, so there was some serious grown-up talk about DIY and home-owning! They’ve got a STUNNING view of London from their apartment – highlights include The Shard and St Paul’s Cathedral, amazing!

We suggested to go to a taco restaurant called Breddos which had been recommended by my brother and the reviews sounded great. Dean and I were a little nervous as we don’t live in London and I’m sure our hosts knew loads of really great places to eat! We were both a little worried it might not be that great.

As it turned out it was bloody amazing and we were all absolutely in love with the place! We pretty much ordered all of the tacos from the menu and sat at the bar area which looked into the kitchen (which was really cool as we could see what was going on). We couldn’t believe how much flavoured they’d packed in to those little tacos!

Comparing that meal to the night before (a 3 Michelin starred restaurant) I hated to admit it but we actually both enjoyed the tacos more! I was really pleased that my brother had recommended it to us and he was pleased to hear that we all thoroughly enjoyed it.

Fried Egg Tacos

Fried egg tacos? YES PLEASE! Enjoy this Mexican-style brunch it is truly mouth watering and packed full of flavour!
Prep Time 5 minutes
Cook Time 3 minutes
Total Time 8 minutes
Servings 2 people

Ingredients
  

  • 4 free range eggs
  • 4 mini tacos
  • 1 avocado
  • 4 baby tomatoes
  • 1 half lime juice
  • 1 handful coriander
  • 1/4 tsp smoked paprika
  • 2 tbsp grated parmesan cheese
  • 1 tbsp rapeseed oil
  • salt and pepper

Instructions
 

  • De-stone the avocado and slice it still in its shell, scoop both halves out and put into a bowl along with the tomato, lime and coriander. Using a balloon whisk crush the ingredients and mix.
  • Heat or cook your tacos according to the instructions. Cook your eggs in an egg pan if you have one to get them perfectly round, using a small amount of the rapeseed oil on each.
  • Place the egg onto the taco and sprinkle the smoked paprika, salt, pepper, cheese and coriander.
  • Serve with the crushed avocado and tomato and enjoy!
