Orzo Salad

Ingredients
  

  • 200 g orzo
  • 30 g sun dried tomatoes halved
  • 30 g mixed olives small
  • 30 g feta cheese cubed
  • 1 tbsp tomato puree
  • 1 tsp dried oregano

Instructions
 

  • Boil a large pan of boiling water add a pinch of salt. Add the orzo and boil for 12 minutes.
  • Chop all of the ingredients except the olives - leave them whole.
  • Once the orzo it cooked drain well and add to a bowl. Mix in the tomato puree and a little bit of the oil from the sun dried tomatoes (optional), then add all of the other ingredients and mix well. Season with oregano, salt and pepper.
  • Serve and enjoy!
