Avocado "Egg Mayo" Bagels With Smoked Salmon

Ingredients
  

  • 2 bagels
  • 1 ripe avocado
  • 2 boiled eggs I boiled mine for 7 minutes
  • 100 g smoked salmon

Instructions
 

  • Boil 2 eggs for 7 minutes on medium heat. Once they are done let them cool and remove the egg shells.
  • Place the warm eggs in a bowl along with the avocado. Using a sharp knife slice everything up so it looks chunky, then use a balloon whisk to mix together until it resembles egg mayo. Season with salt and pepper.
  • Spoon the egg and avocado mixture on to your bagel and top with smoked salmon. Enjoy!
