Avocado "Egg Mayo" Bagels With Smoked Salmon

- 2 bagels
- 1 ripe avocado
- 2 boiled eggs I boiled mine for 7 minutes
- 100 g smoked salmon
Boil 2 eggs for 7 minutes on medium heat. Once they are done let them cool and remove the egg shells.
Place the warm eggs in a bowl along with the avocado. Using a sharp knife slice everything up so it looks chunky, then use a balloon whisk to mix together until it resembles egg mayo. Season with salt and pepper.
Spoon the egg and avocado mixture on to your bagel and top with smoked salmon. Enjoy!
