Creamy Avocado Pesto Linguine with Chicken and Chorizo

This creamy avocado linguine tastes amazing and guess what – it has no cream in it whatsoever! We made avocado pasta quite a while ago and it wasn’t a success so I wanted to give it another go. I wanted it to have lots of flavour as the one I made before was a bit bland. This time I’ve very pleased to say it had tons of flavour. 😋

To get the best from your sauce it’s very important that your avocados are ripe. I aways give mine the test by gently using your thumb and pressing into it, if you leave a dent then they should be nice and ripe. Adding the lemon zest and juice gave it a real fresh taste. I used basil, garlic, pine nuts, and parmesan cheese which are all the ingredients you use to make pesto with. By replacing the oil that you would normally use with the avocado, it gives your sauce good flavour, a super smooth texture and ultimately a more healthy version of traditional pesto.

Avocados are a unique type of fruit which have lots of health benefits to your diet. Even though they are high in fat, they are healthy fats and incredibly nutritious for you. An avocado has 20 different vitamins and minerals in and provides 17% of your vitamin C, 26% vitamin K and has more potassium than a banana.

They do not contain any cholesterol or sodium and are low in saturated fat. Even though they contain about 160 calories they are low in carbs and a great source of fibre. So get more avocados in your diet!

As some will know I lived in Bermuda for a little while, working in a salon. We had an avocado tree in the garden which we shared with two other houses. Unfortunately the year I was there we had no avocado crop which was very disappointing! Fruit and vegetables were so expensive out there that if I bought an avocado it would be a real treat for me.

These days I’m lucky as I get to have them quite a lot, we eat lots of Mexican food so we are always making our guacamole. I also like it on toast with smoked salmon and when the summer months come I will put it in my salads.

This meal is great for a busy week night as there is not much prep or cooking time involved. The day I made it I’d been out all day shopping with my mum so wanted to come back and make something quick and easy but also delicious. It didn’t fail me!

It was so good that I’m excited to make it again. If you wanted to you could have the avocado pasta without the chicken or chorizo. With Dean being a real meat lover I decided to go with that option and it worked. It gave the dish more flavour, texture and colour. Creamy Avocado Pesto Linguine

Creamy Avocado Linguine with Chicken and Chorizo

Ingredients
  

  • 2 ready cooked chicken breasts shredded
  • 120 g chorizo cubed
  • 250 g linguine pasta
  • 2 avocados
  • 2 cloves of garlic
  • 20 g fresh basil
  • 90 g pine nuts
  • 1/2 tsp salt
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 4 tbsp Parmesan cheese
  • 1 tbsp extra virgin olive oil
  • 2 tbsp milk
  • black pepper seasoning

Instructions
 

  • Bring a large pan of salted water to the boil. Add the linguine and cook according to the instruction on the packet.
  • Place the avocado, garlic, basil, pine nuts, salt, lemon zest, lemon juice, parmesan, milk into a blender and season with black pepper. Whiz it all up until smooth.
  • Cook the chicken and chorizo in a pan until warm.
  • When your pasta is cooked, drain it then add the oil followed by the sauce. Stir into your pasta until everything it combined. Heat through on the hob on a medium heat for about 3-4 minutes so the garlic cooks through.
  • Serve your pasta in a bowl and sprinkle the chicken and chorizo on the top of your pasta. Enjoy!
